Traditional salt extraction in the south of France. Salt production is one of the oldest forms of human resource extraction. The vibrant coloring of a pond is linked to the prevalence of micro-organisms and indicates its salinity. Southern France has ideal conditions for solar evaporation so that salt extraction in the region dates back to Antiquity. Over the course of a year, the salinity of a pond increases. By hand, the salt water is passed from basin to basin and finally harvested in late summer.
